When I move the fuel switch to OFF should'nt this kill the fuel going to the engine? I tested it and the bike started up and I drove around and it didn't turn off.

You've got some gas left in the bowl and whatever's still in the lines. Generally give it 2-5 minutes before it runs completely dry -- or to put it another way, it'll wait til you don't suspect anything before dying on ya

After pulling my tank it was installed and accidentally left off. I got about a half a mile damn near wide open before it started to sputter and eventually died. So dont expect it to just stop instantly.
