I've got both a 97 XX (carbed) and a 2002 XX (EFI). By and large, once they warm up, they're the same bike. With the 97, you actually have to use a choke, but only while it's cold. This winter, that was long enough for me to start the bike, and by the time I got ear plugs in, helmet on, gloves on, it was warm enough to idle without the choke. Within the first mile, it was warm enough not to notice a difference. The 97 has a smaller gas tank, and it's got a LOT less going on under the tank. It's also got a lower output stator. Much less complex bike on the outside, and under the tail. The other differences are analog vs digital gauges, and the EFI is tunable with a Power Commander vs having to do carb work.
